Instructions
Start by peeling a medium-sized onion. Cut off the top and bottom, then finely chop it and set aside. Take 10 medium-sized carrots, wash, peel, and cut them into small equal sizes. Leave three carrots uncut.
On medium heat, place a frying pan and add 3 teaspoons of olive oil. Add the chopped onions and sauté until they soften. Then, add the carrots and fry them until they also soften. After a while, pour in 1 liter of vegetable broth. Mix well, turn off the heat, and let it cool.
Use a hand blender to blend the mixture until smooth and creamy. Add salt and ½ teaspoon of black pepper, mix well, and set aside.
Take the three uncut carrots and use a peeler to slice them into thin strips. Set them aside. Peel three cloves of garlic, finely chop them, and set them aside as well.
On medium heat, heat a frying pan with 2 teaspoons of olive oil. Add the minced garlic and sauté for a while. Then, add the carrot slices and fry briefly. Turn off the heat and set aside.
Wash and finely chop some fresh parsley. For serving, pour the hot soup into a bowl, top it with the fried carrots and garlic, and garnish with parsley.
How to Make Vegetable Broth
If you don’t know how to make vegetable broth, follow these steps:
In a large pot on medium heat, add 1 teaspoon of cooking oil. Add 1 bay leaf, 20 cloves of garlic, and 2 medium-sized onions (each cut into eight pieces). Sauté the ingredients for a while. Then, add 2 chopped carrots, some green beans, ½ cup of cabbage, and 1 cup of celery. Sauté well, then add 1 teaspoon of salt and 1 teaspoon of black pepper. Pour in enough water to cover the vegetables, cover the pot with a lid, and let it cook for 30 minutes. Once done, strain the broth and store it in a jar for use in other recipes.
