Ingredients needed:
- Brown lentils
- Vegetable broth
- Olive oil
- Onion
- Salt
- Garlic
- Paprika
- Ground cumin
- Cayenne pepper
- Tomato paste
- Fresh tomatoes
- Sugar
- Fresh lemon zest
- Parsley
- Fresh lemon juice
Cooking the Lentils with Spices
First, bring 1 cup (200g) of brown lentils, wash them thoroughly, and soak them for 10-12 hours overnight. Drain the water, add the soaked lentils to a pan, and pour in 2 cups of vegetable broth. Cover with a lid and cook on medium heat for about 5 to 6 minutes.
Wash one fresh yellow lemon, grate its zest gently, and set it aside. Squeeze the juice into a small bowl and set it aside as well. Wash 10g of parsley, one medium-sized onion, and one medium-sized tomato. Finely chop each and keep them separate.
Place a frying pan over medium heat and add 3 teaspoons of olive oil. Add the chopped onion and ¼ teaspoon of salt, then fry until the onions are browned (about 5 to 6 minutes). Add 1 ½ teaspoons of minced garlic and fry until fragrant. Now, add 2 teaspoons of paprika, 1 ½ teaspoons of ground cumin, a pinch of cayenne pepper, and 1 ½ teaspoons of tomato paste. Fry them for about 2 minutes to cook out the raw flavors of the tomato paste. Next, add 1 cup of chopped tomatoes, stir for a while, increase the heat slightly, and add some salt to taste, ¼ teaspoon of sugar, and ½ cup of water. Bring to a boil and cook on medium heat for about 2 minutes or until the tomatoes are soft.
Add the cooked lentils to the tomato sauce and boil on medium-high heat for about 5 minutes until the water evaporates. Turn off the heat and add the fresh lemon zest, finely chopped parsley, half of the squeezed lemon juice, and some salt and pepper to taste.
