Ingredients Needed:
Basmati rice
Black beans
Olive oil

Cooking Instructions:
Start by opening one can of black beans. If you have fresh beans, wash and boil them in a pan until well cooked, then strain and set aside. Wash one cup of basmati rice thoroughly until the water runs clear, then set aside.
Wash and peel two onions, finely chop them, and heat a frying pan over medium heat. Add three teaspoons of olive oil, pour in the chopped onions, and fry for a while. Dice two bell peppers one red and one green—after washing them well, then add them to the onions and sauté for a while. Peel and chop three cloves of garlic, add them to the vegetables, and roast until soft and fragrant.
Add ¾ cup of strained tomatoes, one teaspoon of ground cumin, one teaspoon of paprika, and ¼ teaspoon of cayenne pepper. Mix well, then add the one cup of washed basmati rice, two cups of cooked black beans (or one can), one cup of frozen corn, ½ teaspoon of salt, vegetable broth, and 1½ teaspoons of black pepper. Mix the ingredients thoroughly and bring to a boil over low heat. Let it cook for about 15 minutes.
Wash and chop some green onion and cilantro, then set aside. Check the pan to ensure the rice is cooked, then add the chopped green onion and cilantro. Mix well and let it cook for five more minutes. Your Mexican rice with beans is now ready to serve.
Serving Suggestion:
For a flavorful chili sauce, mix ¼ cup of ketchup, ½ teaspoon of black pepper, two teaspoons of red chili powder, one teaspoon of mayonnaise, and ½ teaspoon of white vinegar in a bowl. Mix all ingredients thoroughly. You can also add ground jalapeño for those who love spicy dishes.
