Let's Start with the Amazing Recipe:

Start by washing 1 brown onion thoroughly and chopping it roughly. Wash 1 fresh leek well and chop it roughly as well, then set them aside.

On low heat, place a large pot and cover the bottom with ¼ cup olive oil. Let it heat for a while, then add the chopped onion and leek to the pot. Let them sweat for a while. Meanwhile, peel 2 garlic bulbs, mince them well, and add them to the pot along with 1 tsp dried thyme. Mix well and cook gently for 10-15 minutes, ensuring the ingredients do not brown.

Wash and peel 2 medium-sized potatoes, dice them carefully, and add them to the pot. Then, pour in 2 ½ cups of liquid chicken stock, add salt, 1 cup of heavy cooking cream, and ½ tsp black pepper. Mix all the ingredients well and let the soup cook for 3 minutes. Turn off the heat and set it aside to cool.

Pour the soup into a blender and blend until smooth. Then, transfer it to another clean pan.

For the Garnish:

Cut rustic bread into medium slices, then dice into croutons. In a frying pan, heat 2 tsp of olive oil over medium heat. Add the bread croutons and fry on low heat until crispy. To add extra flavor, sprinkle some black pepper, garlic powder, and red chili powder. Before serving, wash some parsley, chop it well, and add it to the soup. Serve the soup with crispy rustic bread for a delicious experience.

Note: If you want a stronger garlic flavor, peel 4 additional garlic cloves and blend them with the soup.
