Cooking Technique of Nigerian Jollof Rice with Chicken

In this article, I will show you how to cook the most delicious Nigerian Jollof rice with chicken really quick and very easy.

Ingredients Needed for Jollof Rice:

    • Turkey, chicken, or beef (any cut of your choice)
    • Onion
    • Curry leaves
    • Fresh thyme
    • Scotch bonnet pepper
    • Vegetable stock
    • Salt
    • Curry powder
    • Garlic powder
    • Garlic
    • Tomato
    • Peeled pepper
    • Olive oil (cooking oil)
    • Fresh ginger
    • Red chili pepper
    • Tomato paste
    • White pepper
    • Bouillon cube
    • Bay leaves
    • Rice
    • Butter

Cooking Steps:

Preparing the Meat:

  1. Take a large, clean pot. You can use chicken (thighs, wings, breast, or drumstick) or beef (rib steak, rump cap, round cut, or shank meat). Wash the meat thoroughly, cut it into equal pieces, and place it in the pot.

  2. Season the meat by adding:

    • Two medium-sized chopped onions

    • Curry leaves (ensure all vegetables are well washed)

    • Fresh thyme

    • One Scotch bonnet pepper (for spice)

    • One bouillon cube or vegetable stock

    • Half a teaspoon of salt

    • Two teaspoons of curry powder

    • One teaspoon of garlic powder

  3. Mix everything well without adding water. Cover with a lid to intensify the flavors and let it simmer for 20 minutes.

  4. Open the pot and add two cups of water (or enough to nearly cover the meat). Cover and continue cooking:

    • For chicken: 10-15 minutes (avoid overcooking to prevent it from falling apart)

    • For beef: Cook until soft


Preparing the Roasted Vegetables:

  1. Gather the following vegetables:

    • Three medium-sized onions

    • Twelve medium-sized tomatoes

    • One whole garlic bulb

    • Four chili peppers

    • Three red peppers

  2. Wash the vegetables well. On an oven plate, spray some olive oil or cooking oil.

  3. Cut the red peppers, onions, and tomatoes in half and place them on the oven plate.

  4. Cut the garlic bulb at the head to expose the inside, drizzle some oil on top, and place it on the plate.

  5. Transfer the plate to a preheated oven at 180°C and roast for 40 minutes. (If you don’t have an oven, use a frying pan on low heat, spray some oil, and cook the vegetables, flipping constantly until soft and juicy.)

  6. Once roasted, blend all the vegetables. For the garlic bulb, simply press it to release the cloves—no need to peel. Add some fresh ginger to the blender.


Frying the Meat:

  1. In a frying pan, pour two cups of cooking oil.

  2. Add half an onion, some thyme, and four garlic cloves to the oil on medium heat for added flavor.

  3. Remove the seasoned meat from the pot and fry until golden brown.


Cooking the Jollof Rice:

  1. In a large pan, heat one cup of oil on medium heat.

  2. Add two chopped onions and sauté for a minute.

  3. Add one teaspoon of tomato paste and continue sautéing for 15-16 minutes.

  4. Add the blended roasted vegetable mix and stir well. Do not add water. If needed, add a little more oil. Let the sauce fry for 15-20 minutes.

  5. In a bowl, wash the rice thoroughly until the water runs clear.

  6. Add the washed rice to the fried sauce.

  7. Mix vegetable stock with a quarter cup of water and pour it over the rice.

  8. Cover with kitchen foil and let it cook for 15 minutes.
